Muddled ginger, this isn't something we've tried before. Initially, finding ginger at the super market was a pain in the butt, but once we found it and learned how to cut it up correctly we were able to create the Ginger Honey Rummy. This is a comical look at what you can do to create a fun seasonal beverage that's worth its weight in...honey.

great cocktail
this one came out great, never mind the mess, and went perfect with sushi.
For the honey, I used the measuring lines it the glass part of the shaker.

A tip about the honey
The trouble you run into with all that sticky mess can be reduced a bit: Please consider measuring the rum into that clever measuring cup, and then adding the honey into it using a squirt top dispenser such as all honey comes in these days (except baby-shower honey). Dump both ingredients into the shaker glass before the honey has a chance to attach itself to your clever little measuring cup. As you muddle the ginger (or mint if it is a julep, which it actually is in a way, isn't it?) the liquor will keep the mixture a little thinner and thus not stick to your muddler quite so much, and the alcohol will help extract the yummy from the ginger.Â
  Honey is good to use in many cocktails as a kind of double syrup and has a folk medicine reputation (the Ricola connection). Try it in a citrus-based hot toddy--both the bourbon and the honey are soothing.

As for cocktail, did it left any bad aftertaste? Like some old and already sour product or so... Maybe it depends on rum? Hope you got what I mean.

Not in the way like sour lemon but more like sour/old milk. As it looks like you are using same word to describe two meanings...

I'd probably say "the lemon is bad" to avoid any type of confusion. I don't have much experience with eating/drinking products past their expiration date for things that are sour... only things that are sweet (since they rarely go bad at all!)

Typically the "best if used by" date is to validate that they KNOW the best quality of the product is within a set period of time. That's not to say it will kill you from poison paste the expiration date but that it won't taste (or may not) as they intended.

Does a fresh honey taste like a ten year old honey...or older... I don't know... but I didn't want to risk giving everyone a "taste" impression without knowing if all my ingredients were up to par.

Don't worry about the expiration date on your honey. It's the only food that does not spoil; in fact, archaeologists found honey 5,000 years old in Egyptian tombs--and it was still good! Here's why:

After a period of time honey will "sugar up" and crystallize, trapping all the water in a chemical bond so that there is no moisture available to support microbes. To use honey that has sugared, just warm it gently until the crystals return to a liquid state. Unless you can see mold growing on your honey (usually as a result of contamination with butter, crumbs, etc.) it's good.

Oh man, The Tick was awesome! I absolutely loved that show--even my dad routinely watched it with me. I actually rented it this summer to watch it again on DVD, and it still kept me entertained (though it could have been me just being nostalgic).

Also, you can use juicer and then mix some of ginger and carrot juices together. Also, it's quite healthy.
